Gluten-Free Kitsune (Fish Cake) Udon πŸ₯

This is the noodle soup to make when you want something quick and fulfilling at the same time! The roasted vegetables soaked in the umami of the dashi broth is the best pairing I could have every day.


Quick dashi broth, bring to boil at medium heat for 15 min

πŸ’¦ 4 cups water

πŸͺΈ 4 pieces of kelp (about 1.5” squares)

πŸ¦‘ Handful of dried bonito flakes or dried scallops

Remove all bits with a sieve. I cut up the kelp and break up the scallops for topping later.

Flavor broth with

πŸ₯ƒ 2 tbsp GF soy sauce

🐟 1 tbsp GF fish sauce

🍢 1 tbsp mirin

πŸ§‚ Pinch of sugar and salt
